Ingredients:
- Appx 350g Penne pasta
- 1 tbsp olive oil
- 1 large onion , thinly sliced
- 2 or more cloves of garlic
- 6 anchovy fillets, drained and chopped
- 1 chilli chopped can of italian or plain tomatoes (or 2 cans)
- smoked chicken
- salt and pepper
- 1/4 cup of olives
- couple of tbsps capers
- juice of lemon
- italian parsley
Method:
- Heat oil, fry onion until softened, add garlic, anchovies, chilli and saute until aromatic.
- Pour over canned tomatoes with their juice.
- Add smoked chicken ripped into bite size pieces.
- Season with salt and pepper
- Cook pasta in salted water for apprx 10-12 minutes until al dente.
- Drain.
- Add to tomatoes etc, add lemon juice and sprinkle with parsley
