Ingredients:
- 3 kinds of bell peppers
- 1/4 onion
- 100 gm smoked chicken
- 1/2 cup crispy noodles
- 1/2 spring onion
- 1 head mixed green salad leaves
Vinaigrette:
- 2 tbsp coconut cream
- 2 tbsp sweet chilli sauce
- 2 tbsp spring coriander
- 2 tbsp oil
- 1 lemon juice
- 2 tbsp mint leaves
Directions:
- Place the chopped coriander, mint leaves, coconut cream, sweet chili sauce in a bowl, then add oils, whisking as you go. Add lemon juice. Season with pepper and salt.
- Thinly slice the smoked chicken and put in a large bowl, add the sliced onion, peppers, spring onion and crispy noodles, mixed with green salad leaves.
- Toss and season with vinaigrette.
- Serve at room temperature or chilled.
