Thai Smoked Chicken Salad


  • 3 kinds of bell peppers
  • 1/4 onion
  • 100 gm smoked chicken
  • 1/2 cup crispy noodles
  • 1/2 spring onion
  • 1 head mixed green salad leaves


  • 2 tbsp coconut cream
  • 2 tbsp sweet chilli sauce
  • 2 tbsp spring coriander
  • 2 tbsp oil
  • 1 lemon juice
  • 2 tbsp mint leaves


  • Place the chopped coriander, mint leaves, coconut cream, sweet chili sauce in a bowl, then add oils, whisking as you go. Add lemon juice. Season with pepper and salt.
  • Thinly slice the smoked chicken and put in a large bowl, add the sliced onion, peppers, spring onion and crispy noodles, mixed with green salad leaves.
  • Toss and season with vinaigrette.
  • Serve at room temperature or chilled.
