Serves 2
Ingredients:
- 200g rump topside steak
- 1 tbsp oil
- 1 tsp fish sauce
- salt and pepper
- 2 red onion, sliced
- 1 tomato quartered
- 1 cup cucumber, peeled and chopped
- 50g slice of capsicums
- 100g mixed lettuce leaves
Spicy dressing:
- 1 tbsp chilli oil
- 2 tbsp fish sauce
- 2 tbsp lemon juice
- 2 tbsp sugar
- 1 tbsp spring onion, chopped
- 1 tbsp chopped fresh coriander
Mix together oil, fish sauce, salt, pepper and beef, and leave to marinate for at least 10 minutes. Arrange lettuce, tomatoes, cucumbers, onions and capsicums on a serving platter
Heat a frying or char grilled pan over a HIGH heat until hot, and add beef to cook for 12 minutes (if that) each side or until cooked to your liking. Set aside to cool. You can either slice the beef then, or slice it before cooking.
To make the dressing, place chilli oil, sugar, lemon juice, fish sauce, coriander, spring and red onion in a bowl; add beef and mix, then add on top of salad.
