Takes 20 minutes, serves 4
Ingredients:
- 16 peeled prawns (uncooked)
- 1 lemon grass
- 1 slice of galangal
- 1 kaffir lime leaf
- 1 tbsp hot chilli oil
- 1 tsp chilli paste (tom yam paste)
- 3 tbsp fish sauce
- 3 tbsp lemon juice
- 2 cups chicken soup stock
- 200g mushrooms, cut into quarters
- 1 tomato
- 1 spring onion
- 1 fresh coriander
- 1 coriander root
Method:
In a pot bring chicken soup stock to the boil
Add lemon grass, coriander, galangal, kaffir lime leaves, chilli paste, chilli, oil, lemon juice, fish sauce to the chicken soup stock and stir
Add prawns, mushrooms, spring onions, tomato and let simmer for 3 minutes or until the prawns turn pink
Garnish with coriander leaves
