Red Pork Curry (Gang Ped Mu)

Serves 2


  • 300g pork fillets,sliced
  • 50g bamboo shoots
  • 50g courgettes
  • 50g sliced capsicums
  • 250 ml coconut milk
  • 1 tbsp oil
  • 1 tbsp red curry paste
  • 2 tbsp fish sauce
  • 2 tbsp sugar
  • 1 kaffir lime leaf
  • sweet basil leaves

Heat oil in a pot over medium heat and add curry paste, pork and stir fry for 2 minutes

Add coconut milk, kaffir lime leaf, fish sauce, sugar and bamboo shoots, simmer for 5 minutes. Add courgettes and simmer for another minutes. Add capsicums and basil leaves and remove from the heat.

If making green chicken curry, just use green paste instead of red, and chicken instead of pork. Double the recipe for serving for four except the curry paste. Keep at 1 tbsp.
