Mum’s Pad Thai

Sauce:

  • 1/4 cup fish sauce
  • 1/4 cup brown sugar
  • 3 tbsp lemon juice
  • 3 tbsp chilli sauce

In a bowl:

  • Crack 3 or 4 eggs, and beat them together

In pan:

  • 2 tbsp [peanut] oil
  • Pour the egg mixture into the pan so it fills the whole pan, and cook until firm
  • When cooked, roll it up and then cut into slices

Soak 400g rice noodles in boiling water until soft

In pan:

  • Heather another 2 tbsp oil
  • Add 500g sliced chicken
  • 3 garlic cloves
  • 2 tbsp grated ginger
  • Add some red pepper (if in season)
  • Cook for five minutes until chicken is cooked
  • Add the rice noodles

To serve:

  • Add noodles & egg to chicken mix
  • Toss gently
  • Add sauce
  • Slice spring onions
  • Heat through
  • Add 2 cups of bean sprouts
  • Pile this on plates
  • Add 1/4 cup of chopped peanuts [not 1/4 cup per plate, but across all dishes]
  • Add lemon wedges
  • Coriander to garnish
