From Kim Broom
Base:
- 150g butter
- 1/4 cup icing sugar
- 1 cup flour
Topping:
- 4 eggs
- 1/2 cup flour
- 1.5 cup castor sugar
- 1 tsp Baking powder
Method:
- Cream butter and sugar
- Add flour, mix
- Press into tin.
- Bake 170c for 20 min
- TURN OVEN to 160c
Next:
- Whisk eggs, sugar and lemon juice until creamy.
- Add remaining flour and BP to egg mixture and gently mix
- Pour into the base and bake 30 min or until topping is set.
- When cool dust with icing sugar.
