Lemon Shortcake

From Kim Broom

Base:

  • 150g butter
  • 1/4 cup icing sugar
  • 1 cup flour

Topping:

  • 4 eggs
  • 1/2 cup flour
  • 1.5 cup castor sugar
  • 1 tsp Baking powder

Method:

  • Cream butter and sugar ­
  • Add flour, mix
  • Press into tin.
  • Bake 170c for 20 min
  • TURN OVEN to 160c

Next:

  • Whisk eggs, sugar and lemon juice until creamy.
  • Add remaining flour and BP to egg mixture and gently mix
  • Pour into the base and bake 30 min or until topping is set.
  • When cool dust with icing sugar.
