- 12 lemons, can also use grapefruit or oranges
- 2 cups water
- 1.5 kg sugar or honey
- 1 tbsp epsom salts
- 1.5 tbsp citric acid
- Squeeze lemons and grate rind finely of 3 lemons.
- Put lemon juice, rind, sugar and water into saucepan and bring to the boil, stirring til sugar melts.
- Add epsom salts and citric acid while still hot. Strain, bottle and refrigerate.
- Dilute according to taste
