Lamb and Couscous salad


  • 200gm lamb leg steak
  • 2 tbsp moroccan seasoning
  • 1 tbsp olive oil
  • 1/2 cup couscous
  • 1 cup water
  • 1 tbsp chopped parsley
  • 1 tbsp chopped coriander
  • 1/2 capsicum
  • 1 tomato
  • 1/2 red onion
  • 1 hand mesclun salad
  • S&P
  • balsamic vinegar

Marinate lamb with moroccan seasoning, salt and pepper.

Heat oil and cook the meat in the pan, over high heat for 1 minute until browned. Set aside to cool, then slice diagonally into 1 cm slices. Cook couscous, then set aside

Slice the onion and capsicum, then lightly toss in the hot pan. Place the tomatoes in boiling water for half a minute, then skin, de­seed and sliced. Place all the ingredients together and carefully pour the dressing over the mixutre and toss together. Garnish with chopped parsley and coriander. Serve with sliced bread.
