Fried Chicken and Cashew Nuts

Serves 2


  • 200g chicken fillets, sliced
  • 1/2 cup fried cashew nuts
  • 1/2 cup sliced onion
  • 1/2 cup sliced carrot
  • 3 sliced capsicums
  • 1 spring onion, sliced
  • 1/2 cup oil
  • 1 tbsp hot chilli oil
  • 2 tbsp oyster sauce
  • 1¬†tbsp light soy sauce
  • 1/4 tsp ground pepper
  • 1 tsp garlic
  • 1 tbsp sugar

Heat oil in a wok over medium heat, put garlic and chicken in and stir fry over a medium to low heat.

Add onion, carrots, capsicums. Season with oyster sauce, light soy sauce, hot chilli oil, sugar, ground pepper and stir to mix.

Add cashew nuts and spring onions, turn up the heat and stir fry rapidly, then take off the heat.
