Champagne Chicken and Pear

Ingredients

  • Chicken pieces x 6
  • Olive oil for browning

#1

  • 1 onion, chopped
  • 1 bay leaf
  • 1 tbsp thyme
  • 1 cinnamon stick
  • 1 tbsp thyme
  • 1 tbsp whole cardamons

#2:

  • 1/4 cup raisins
  • 2 pears, peeled
  • 1 grated orange (orange pulp or juice)
  • 1 cup of white wine -­ we used champagne, could use chardonnay
  • 1/2 cup of chicken stock
  • 1 tbsp honey

Method:

  • Brown Chicken in olive oil, then take the chicken out of the pan
  • Add to pan, all the ingredients in #1 and simmer for 5 minutes
  • Pour #2 into a casserole dish, add the chicken and cook in oven for 1 hour at 175 (for 6 to 8 pieces)
