Carrot Cake

Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 cup oil
  • 4 eggs
  • 3 big cups of carrots
  • 1 tsp vanilla
  • 1 cup chopped walnuts (discretionary (?) )

Sift the ingredients, then add oil and beat in eggs. Then add the other ingredients. Cook in two ring tins, for 45 minutes at 315F (160C).

Icing: Lemon juice 4oz cream cheese 1 tsp vanilla 4 oz soft butter 6 oz icing sugar
